The performance is considered as an issue of company’s management operating in the primary, secondary and tertiary sector. A good performance indicator must be relevant, measurable and corrective in order to meet the needs of decision-makers. This paper aims to analyze a maintenance study about a chocolate factory as an agri-food sector. This study led to a diagnosis of the maintenance process in order to manage the performance using the key performance indicators.
